You can get this on any difficulty. Just load up a track you're comfortable with and set the difficulty to Rookie or any difficulty you want. Then just complete 5 races in first place. When you finish one race on the results screen you can press Triangle (PS3) or Y (XBoX) to restart it and it will count towards 5.
